The name of the village, according to the native schoolteacher and history lover Mr Mihalis Stylianakis, emanates from the initiative of the surrounded communities to build a kefalohori (big and powerful village) and thus was created Demati, ( from the word deno and dema, meaning tight up held togrther) from the union of smaller settlements that once surrounded that area. Another interpretation that he has provided us with is that the name Demati is a compound word made out of Des and Mati; Demati, (look and eye) as the splendid view invites us to admire its beauty with our eyes.

Leaving from Tsoutsouros and returning to Kato Kasteliana , the road leads east to Favriana. The village is built on the hill that dominates the region and provides marvellous view up to the hilltops that separate the three plains; of Messara, of Arkalochori and the Kasteli Plain.
The Anapodiaris river roars during the winter months, while in the summertime, a permanent fresh breeze protects residents and visitors from the excessive heat of the sun. The position of the village, in close proximity to ancient city Priansos, and the archaeological discoveries in the wider area, suggest a long and interesting existence.

Βυζαντινό Μοναστήρι Αγίας Παρασκευής στο Δεμάτι
Πρόκειται για μοναστηριακό συγκρότημα της β΄βυζαντινής περιόδου (12ος– 13ος αι.), το οποίο βρίσκεται νότια του οικισμού Δεμάτι, στους πρόποδες του βουνού Χούσακα των Αστερουσίων και σε απόσταση 30 χλμ. περίπου από το Καστέλλι.
Το μοναστήρι περιλαμβάνει τρεις μονόχωρους ναούς: της Αγίας Παρασκευής, του Μιχαήλ Αρχαγγέλου και του Αγίου Μάρκου. Στους δύο πρώτους, διακρίνονται οι τοιχογραφίες χάρις στις επεμβάσεις αποκατάστασης και συντήρησης της αρχαιολογικής υπηρεσίας. Στο ναό του Μιχαήλ Αρχαγγέλου ωστόσο, ο εικονογραφικός διάκοσμος σώζεται μόνο στο βόρειο τμήμα του, καθώς η εκκλησία είχε υποστεί καταστροφές από βομβαρδισμούς του β΄παγκοσμίου πολέμου. Δυστυχώς, σε κακή κατάσταση βρίσκεται ο ναός του Αγίου Μάρκου, ο οποίος χρήζει αναστύλωσης, ενώ οι τοιχογραφίες του δεν μπορούν να αναγνωσθούν.
